Facility Support Space
Meal Service
A large kitchen is located
at level one adjacent to the elevators and to the shipping/receiving
and garbage storage areas. Each Resident Home Area (RHA) has
a servery directly adjacent to the dining area. The main kitchen
has the capacity to produce the meals required for the facility
and also includes sufficient storage space (refrigerated and frozen)
to store out-sourced products. The kitchen design was carried
out by Van Velzen & Radchenko Design Associates Ltd. The
design is flexible to respond to changes in preparation methods
and to changes in dietary requirements.
The kitchen contains
dry goods storage and refrigerated/frozen storage space. It
has the appropriate food preparation areas and wash-up areas and
as well as hand-washing sinks for staff. The kitchen design
provides for an efficient work flow that prevents cross contamination
between clean and soiled areas and supports the production and transportation
of food in a safe manner. The kitchen has a non-slip floor
finish and adequate floor drainage for washing.
Food from the kitchen
goes directly to the adjacent elevators and to the serveries located
in each RHA. Dishwashing occurs in the individual serveries.
The dining room in each RHA has a resident counter with a sink and
a domestic refrigerator.
Laundry Service
Laundry service for linens
are out-sourced. Appropriate cart storage areas for soiled
and clean linens are provided adjacent to the shipping/receiving
area. Personal laundry is done in-house and facilities for
this service are provided at level one adjacent to the linen storage
areas for easy control and delivery of all laundry. Each RHA
contains its own clean utility room and soiled utility room.
Administrative Services
Administrative offices
are located on level two directly off the main lobby at the entrance
to the building. A reception desk faces the front doors and
the elevators and acts as a control point and information centre.
This function is adjacent to a large photocopy/supply room serving
all offices. Offices are provided for staff (Executive Director,
Senior Administrators, Finance, Manager of Total Quality Services,
Admissions Clerk, Executive Assistant) and for related initiatives
such as the Fairhaven Foundation . A board room is provided
central to all offices and to the public corridor.
Building Services
The main receiving/shipping area is located on level one. Grouped near it are the laundry services areas, housekeeping storage for equipment and cleaning supplies, the main kitchen, recycling and garbage storage and facilities for plant and property.
Housekeeping Services
Each RHA has its own
housekeeping room for storage of housekeeping supplies and equipment
and with a curbed slop sink. In addition, a separate but similar
room is provided in the core area at each floor for the common areas
of the building.
